To get around the cruise-ship-dump-off of tourists in Venice, remember they all leave around sunset and the city empties out. A great suggestion for Venice is to adopt something close to my Burning Man schedule: Stay up til 3 AM wandering the streets and canals, then go sleep and wake up around noon or 1 PM. Start eating some amazing lunch somewhere, wander, take photos, eat more, have wine, shop, more photos, more eating, sunset, then wander after dark. You see a lot of peaceful scenes like this.
